韩式酱南瓜 / Korean Pumpkin Side Dish

我用了香葱油来烧南瓜,然后调入少许盐和蜂蜜, 就是一道韩国料理店常见的小菜~酱南瓜,不过韩式的酱南瓜不放干葱头,只在起锅前拌入蒜米和烤香芝麻。
南瓜含有胡萝卜素、维生素B、维生素C和钙、磷等成分。 南瓜营养价值高,常食可以改善营养不良、体质衰弱症状。


材料 :
1/2 个/600 克 南瓜
4 个                干葱头,去皮,切细

调料 :
一撮                 盐
2小匙               蜂蜜
100 毫升          水

做法 :
1. 南瓜削皮去籽,切块 。

2. 炒锅放油3大匙,爆香干葱头, 捞起干葱酥,置旁,待用。

3.  倒入南瓜煸炒,加盐和蜂蜜,翻炒几下后加入水。

4. 加盖后小火焖至南瓜熟软,上碟后洒上干葱酥。


Korean Pumpkin Side Dish
This is a very common and delicious side dish both in Korean restaurants and households.Pumpkin is rich in beta carotene, iron, vitamin C and potassium. Healthy, easy and delicious. 

Ingredients :
1/2 piece/600 g Pumpkin
4 pcs                 Shallots, skinned and sliced thinly

Seasonings :
Pinch of salt
2 tsp      Honey
100ml    Water

Method :
1. Skin and scape out the seeds from the pumpkin, then cut into 2" chunks .

2. Add 3 tbsp of oil in a wok and fry the shallots until fragrant and crispy. Dish out the shallot crips and leave aside. 

3. Add the cut pumpkins into the wok and stir fry until evenly coated with oil.Add in salt and honey and stir to mix well , then add in the water.

4. Cover with a lid and simmer until the pumpkin is softened .Garnish with the fried shallot crips and serve.

泡菜炒薄五花肉

还没吃到适合我口味的泡菜炒猪肉,为了解馋,只好自己动手了,呵呵!

材料:

350 g  薄五花肉片
200 g  泡菜,切片
2 片 姜
100 g 大洋葱,切块
2 根 葱白,切段

调味料
2 tbsp 韩国辣椒酱
1 tbsp 韩国辣椒粉
1 tsp 糖
2 tsp 生抽
1 tbsp 米酒
少许 黑胡椒粉

少许 烤香芝麻


作法:
1. 调味料用2大匙水开匀,待用。

2. 炒锅加入2大匙麻油,加入泡菜、洋葱、姜 和葱白炒至泡菜微焦。

3. 加入五花肉片翻炒片刻后,倒入 (1) 和少许开水兜匀,再撒入一些烤香芝麻即可上桌。

註:
1.薄五花肉片可在韩国超市买到。
2.尽量买已发酵一个月或以上的泡菜。

2015: Enjoy life // Korean Braised Beef With Potatoes (:

新年快乐,大家好 🎉 好多年前一位好友提议让我写部落格,分享我烹饪和烘培的一些心得。今天心血来潮,有了这个冲动想写,就开了一个部落格。欢迎大家来此分享你做饭的心得。

韩式辣焖牛腩
材料:
600g 牛腩,切小块,如水浸泡去除血水
4个 土豆,去皮切块(滚刀块)
2根 大蒜
5扁蒜头,切段(白色部分)
6~8个小辣椒
4大匙生抽
1大匙料酒
2小匙糖
适量黑胡椒粉
300~350ml 水
1小匙麻油
30g 松子,磨碎

做法:
1.锅烧热加入麻油,大蒜,蒜头和牛腩拌炒。
2.加入黑胡椒粉,料酒,生抽,糖和清水,搅拌均匀。
3.加入土豆和辣椒烧开,加盖转小火焖11/2个小时左右。
4.当牛腩煮至用筷子能轻松插入即可加入磨碎的松子。
5.出锅装盘,撒上芝麻即可。

Korean Braised Beef With Potatoes

Ingredients:
600g Beef brisket , cut into small pieces and soak in water to remove blood
4 pcs Potato ,cut into quarters
2pcs Leek, thinly slice (white part only)
5pcs Garlic,peel and leave whole
6~8pcs Chili Padi
4tbsp Soy sauce
1tbsp Cooking wine
2tsp Sugar
Some black pepper powder
300~350ml Water
1tsp Sesame oil
30g Ground pine nuts

Method :
1.Heat a heavy bottom pot with sesame oil and mix in the sliced leeks, garlic and beef. Stir to mix well.
2.Add in black pepper powder, poking wine, soy sauce, sugar and water , mix well to combine.
3. Add in the potatoes and chili padi and bring to a boil, lower heat, cover the pot and simmer until the beef is tender,about 1 1/2 hours.
4. Stir the ground pine nuts into the cooked dish.
5. Transfer to a serving dish and sprinkle with sesame seeds.
