牛油蛋糕
材料:
250g 无盐牛油,从冰箱拿出来置于室温15分钟
200g 细砂糖
5 pcs 蛋,室温(蛋黄和蛋白分开)
200g 普通面粉
2tsp 泡打粉
1/2tsp 盐
1tsp 香草精
用具:8寸蛋糕模一个,把模涂上油,底部垫牛油纸
做法:
1.预热烤炉上下火180度。
2.将面粉,泡打粉和盐过筛。
3.取一干净无油无水的碗打发蛋白,蛋白打起泡后,50g 的糖分3次加入打发至光滑雪白,勾起尾端呈弯曲状,此时即为湿性发泡,约7分发。 待用。
4.接下来用回刚才打蛋白的搅拌器搅拌牛油1分钟后加入150g糖,继续搅拌4分钟至淡黄色,松软绒毛状。此时将香草精和蛋黄加入。
5.分次加入蛋黄,每打一粒蛋黄,确定它完全被搅拌其中(大约1分钟), 方可继续加入下一粒蛋黄。
6.將面粉分次加入(5)中, 用橡皮刀攪勻至混合.
7. 接着将打发的蛋白分两次加入(6)中,用橡皮刀搅匀。(不要过度搅拌以免消泡。)
8.将蛋糕糊倒入蛋糕模内,以180度烤约50分钟。
Butter Cake
Ingredients:
250g Unsalted butter, softened at room temp for about 15 mins
200g Castor sugar
5pcs Eggs ,separate the whites from the yolks
200g All purpose flour
2tsp Baking powder
1/2tsp Salt
1tsp Vanilla essence
8" cake tin greased and line the bottom with baking paper
Method :
1.Preheat the oven to 180deg C.
2. Sift the flour with baking powder and salt, set aside .
3. Use a clean and dry bowl to beat the egg whites till foamy.Add in 50g castor sugar in 3 batches and beat till soft peak forms.
4.Use the same beater to beat the butter for 1 min, then add in the rest of the castor sugar (150g) and beat for another 4 mins until light and fluffy.Add in the essence and yolks.
5. Add the yolks one at a time,beating to combine.
6. Fold the sifted flour into (5) in three batches and mix just combined.
7. Fold the meringue into(6) in two batches carefully.
8.Pour batter into prepared pan and bake at 180deg C for 50 mins.
