鲜蚝炒面

我经常炒这道面给家人吃。老爸每回吃了总是说我煮的比外面卖的好吃,哈哈...
我就和大家来分享吧!

材料:
(A)清鸡汤
2副 鸡架(大约750g)
25g 江鱼仔
1.5liter 水
2片 姜

做法:
1. 将鸡架洗净,入沸水锅汆烫去除血水。洗净,控干备用。

2.江鱼子也稍微过水洗净。

3. 将全部用料和水放入高压锅煮50分钟。

4. 将煮好的鸡汤滤去所有杂质,即为清鸡汤。剩余的清鸡汤可以放进冰箱保存2天、冷冻室1周。


(B)
100g 干葱头,切碎
5瓣蒜头,切碎
600g 油面,用水沖洗去掉一些碱味,滤干
300g 鲜蚝,水洗后放在滤网里滴干水份
100g 鸡胸肉,切丝,加入少许胡椒粉,米酒和生抽腌制
10尾 海虾,去壳,去虾肠,加入少许胡椒粉,米酒和生抽腌制
10粒 鱼丸,切片
250g 青菜,切段
适量 豆芽,去尾
700ml 清鸡汤

调味料
1大匙 蚝油
2大匙 生抽
少许 胡椒粉

做法:
1.用适量食油爆香干葱头,把葱油酥捞起,置一旁待用。

2. 炒锅留大约5大勺葱油,炒香蒜米,加入鸡肉丝、片鱼丸、虾、鲜蚝和调味料炒匀。

3.加入油面和青菜拌匀。

4. 倒入鸡湯,中大火烧开后盍上锅盖焖5分钟,加入豆芽炒匀即可。

5.上碟,洒上葱油酥便可享用。

Fresh Oyster Fried Yellow Noodles

This is one of the fried noodles that my family enjoys very much. There are many alternatives for oyster such as squids and clams and pork can be used instead of chicken .

Ingredients :
(A) Clear chicken stock
750g Chicken carcass
25g Anchovy
1.5liter Water
2 slices Ginger

Method:
1. Wash and clean the chicken carcass, place them into a pot of boiling water to cook for about 5 minutes.  Rinse  under running tap water and drain.

2. Place the carcass and washed anchovy and the rest of the ingredients to a pressure cooker and cook for 50 minutes.

3. Strain the stock and discard the solids. Left over stock can be kept in the fridge for 2 days and a week in the freezer for later use.


(B)
100g Shallots, chopped
5 pcs Garlic, mince
600g Yellow noodles, rinse under running tap water to remove some alkaline taste, drain
300g Fresh oyster, wash and drain
100g Chicken breast, sliced and marinade with some pepper, soy sauce and cooking wine
10 pcs Fresh prawns, shelled and de-veined , wash then marinade with some pepper, soy sauce and cooking wine
10 pcs Fish ball, sliced
250g Cai Xin, chopped
Some Beansprouts 
700ml Clear chicken stock

Seasonings
1tbsp Oyster sauce
2 tbsp Soy sauce
Pepper to taste

Method:
1. Heat up oil, sauté the chopped shallots till aromatic and crispy . Dish up the fried shallots and put aside.

2. Leave about 5tbsp of shallot oil in the wok, add in the minced garlic, chicken,fish balls,prawns, oyster and seasoning and stir fry till fragrant.

3.Add in the noodles and can xin and stir fry until well mixed.

4. Add in chicken stock and bring to a boil , lower the heat and cover the wok to cook for another 5 minutes.Add the beansprouts and mix well.

5.Garnish with some fried crispy shallots and serve.
